Method
- Melt the coconut oil in a saucepan over a low heat, stir in the cardamom seeds then add the apple pieces and saute for 2–3 minutes.
- Add the ground almonds to the pan and stir before adding the elderberry juice and water.
- Bring to the boil then simmer for 10–20 minutes, until the apples are tender.
- Allow to cool a little before stirring in the honey and transferring to a blender.
- Blend until smooth then serve warm with a large swirl of natural yogurt.
Notes
In the autumn when elderberries are in season, substitute the ½ cup of elderberry juice for a cup of fresh elderberries.
