Sweet Potato Blinis

Ingredients
  

  • 2 tbsp sweet potato mash
  • 2 eggs
  • 1 tbsp arrowroot powder
  • 1 tbsp chopped fresh chives
  • 1 tsp dried parsley
  • 1/4 tsp bicarbonate of soda
  • 1/2 tsp sea salt
  • 1/4 tsp garlic granules
  • 1 tsp olive oil

Method
 

  1. In a bowl, place all the ingredients except the olive oil. Mix well until smooth.
  2. Heat a pan and add the olive oil. Scoop the mixture with a tablespoon, creating mini pancakes.
  3. Cook just like pancakes, about 2 minutes on each side.

Notes

Perfect on its own for breakfast, as blinis with smoked salmon and dill, or with a salad. Consume immediately.
