Liver Detox Omelet

Ingredients
  

  • 200 g mushrooms
  • 2 tbsp chopped chives
  • 2 tbsp chopped curly parsley
  • 1/2 onion
  • 3 eggs 3 whites and 2 yolks
  • 1 tsp olive oil
  • sea salt and pepper

Method
 

  1. Heat the olive oil in a pan and add the chopped onion. Soften on medium heat for 3 minutes, then add the finely sliced mushrooms.
  2. Add salt and pepper to taste, and fry for 5 minutes until the mushrooms reduce in size.
  3. In the meantime, beat the eggs in a large bowl incorporating the herbs, and add sea salt and pepper to taste.
  4. Pour over the mushrooms in the same pan, cover, and cook on medium heat until done. Enjoy!

Notes

Onion and parsley contain chelating agents great for heavy metal detoxification. Mushrooms are cleansing, anti-inflammatory, and feed good bacteria in the gut.
