Method
- Using a mandolin, shave the asparagus and place in a salad bowl. Grate or julienne the zucchini and add to the bowl. Dice the avocado and add it also.
- For the dressing, place all dressing ingredients in a bowl and whisk well.
- Add the dressing to the salad, toss and leave it to sit for at least 20 minutes before consuming.
- Taste and adjust salt or apple cider vinegar as needed. Enjoy!
Notes
Asparagus, zucchini, and avocado are all rich prebiotic foods that feed beneficial gut bacteria. Keeps in the fridge for up to 2 days without the dressing mixed in.
