Method
- In a bowl, place all the ingredients except the olive oil. Mix well until smooth.
- Heat a pan and add the olive oil. Scoop the mixture with a tablespoon, creating mini pancakes.
- Cook just like pancakes, about 2 minutes on each side.
Notes
Perfect on its own for breakfast, as blinis with smoked salmon and dill, or with a salad. Consume immediately.
