Red Lentil Buns

Ingredients
  

  • 200 g red lentils, rinsed
  • 20 g psyllium husk 1/4 cup
  • 1/4 cup water
  • 1 1/2 tbsp olive oil
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tbsp vinegar
  • 3 tbsp mixed seeds

Method
 

  1. Rinse the red lentils thoroughly and blend into a smooth batter with all other ingredients except the seeds.
  2. Stir in the mixed seeds.
  3. Shape into buns on a lined baking tray.
  4. Bake in a preheated 180C oven for 25 minutes, or until golden and cooked through.

Notes

Best eaten fresh. Store in an airtight container for up to 3 days. These work beautifully as burger buns or sandwich bases.
